Let’s not over romanticise this too much; bruschetta or bread
and tomatoes whatever you’d like to call it was invented as a vehicle to avoid
waste. Clever cooks of yore took some
stale bread, rubbed garlic on it, and covered it with ripe juicy tomatoes and
olive oil.
Turns out it was delicious; but that should be no surprise
with good ingredients at the core of the dish.
More often than not we’ll have some tomatoes just on the turn in our
fridge; in actual fact there’s usually a bendy carrot as well but I’ve not
found a use for that yet...
